Vegan Thandai Kulfi
What You Need
For The Powder Mix
2-3 green cardamom (elaichi)
2 tsp poppy seeds (khus khus)
1 tsp fennel seeds (saunf)
5-6 black peppercorns (kali mirch)
¾ strands of saffron (kesar)
1 tsp roasted watermelon or sunflower seeds
A pinch of nutmeg (optional)
For The Drink
4 cups almond milk
TRIHAA’s Palm Sugar
For Garnishing
Chopped pistachios
Pinch of Saffron
Preparation
Take all the ingredients in a grinder and grind really fine.
Lightly warm the milk with Trihaa’s palm sugar and few strands of saffron.
Add the ground powder and mix well. Add more water if needed to get the desired consistency.
Strain the mixture to remove any particles and get a smooth consistency.
Cool and let it refrigerate for a minimum of one hour to let the spices infuse in the drink.
Set the mixture in kulfi cones and set to freeze.
